Lowcountry Shrimp Boil

Description: There is nothing like a Wall Lowcountry Boil. While this recipe brings the food to life the true joie de vie of Rick Wall’s preparation of this dish can’t be duplicated.

Ingredients:
Seasoning- cayenne and black pepper, cloves, bay leaves, old bay seasoning, and tabasco
2 Lemons
1 Onion
1/2 Pounds sausage per person cut into 1inch pieces
1/2 Pounds raw shrimp in shell per person
3 Red potatoes per person whole
1 Ear of corn per person cut into 1/3-1/2
Cocktail Sauce - see recipe
Special tools/utensils needed: Large stock pot
Instructions:
Fill shrimp pot with water. More is better. Add seasoning, quartered lemons and sliced onion. Boil water until rolling. Could take while… have a Corona or 2
When water is boiling, be sure to verify that the strainer is in the pot. Style points are deducted if you place the food directly into the pot….a real possibility depending on the number of Corona’s consumed.
Add the potatoes and the sausage to the pot. In 10 minutes add the corn. In 10 minutes add the shrimp. Cook for an additional 3 min if shrimp are medium-large or and additional 2 min for small-medium
Pull strainer. Dump contents on a plate. Eat. ENJOY!
