Description:
Prep time: 12-15 minutes
Total time: 30 minutes plus refrigeration
Servings: 6 to 8
Difficulty rating: 2
Ingredients:
1 cup Sugar
1/2 cup All-purpose flour
1/2 teaspoon Salt
2 cups 2% Milk
1 teaspoon Vanilla extract
1 tablespoon Butter
4 large Egg yolks
1 box Vanilla wafers
5 Ripe bananas
Special tools/utensils needed:
9 x 9 in baking dish, knife, plastic wrap, mixing bowl, spoon, heavy saucepan, fork
Directions:
Line the bottom of the baking dish with vanilla wafers.
Peel and slice bananas into 3/8 in rounds. Cover banana slices with plastic wrap to keep them from darkening.
Combine sugar, flour, and salt in a mixing bowl, and stir well to combine. Mash out any flour lumps with the back of a spoon. Set aside.
In a heavy saucepan, beat the yolks well with a fork. Over medium heat, add the flour mixture to the egg yolks, alternately with milk and vanilla, stirring constantly. Bring to a gentle boil and when the mixture begins to thicken, add the butter, continuing to stir.
Keep boiling and stirring until mixture reaches pudding consistency. Remove from heat.
Place layer of banana on vanilla wafers. Pour half of pudding mixture on top of bananas. Add another layer of wafers, bananas, and pudding. Cover and refrigerate.
