Slow Cooker Rice and Beans

Description: The best food with the least effort :) Kinda like a West African "soup", but Cajun and without the okra.

Total time: 10 hours on high -12 on low

Ingredients:
1 Pound beans (we use dried speckled butter beans, but you also use small red beans)
1 Onion, diced
4 Celery stalks, chopped
7 Ounce smoked boneless pork chops, diced into small cubes
12 Ounce andouille sausage, cut in half and sliced to same size as pork chops
1 Teaspoon salt
1/2 Teaspoon cayenne or chili pepper
1/2 Teaspoon dried thyme
2 Bay leaves
6 Garlic cloves, minced or crushed
White rice, prepared per package directions
Special tools/utensils needed:
slow cooker
Directions:
Just put everything in the slow cooker. No need to sauté anything, soak or presoak. Like farm-to-table, think of this as crock pot-to-table. Add enough water to cover all the ingredients + 1" ... about 7-8 cups. That's it!
Cook as above, 10 hours on high, 12 on low.
Sometime before the crock pot is finished, don't forget to make the rice ... probably 4 cups if you're planning to serve 6.
When beans are mushy, remove the bay leaves & serve over 2/3 cup rice.
