Vegetable Casserole

Description: This is a Hodge Family favorite and staple at holiday dinners. Casserole (minus the butter, crackers) can be made ahead and refrigerated or frozen. When ready to serve, add the last two ingredients and bake.

Ingredients:
2 tablespoons butter
1/2 cup chopped celery
1/4 cup chopped green pepper
1/2 cup chopped onion
1 can shoe peg corn, drained
1 can French style green beans, drained
1 cup sour cream
1 can cream of celery soup
1/2 cup grated cheese (or more)
1 stick butter, melted
1/2 box Cheez-It crackers, crushed
Special tools/utensils needed:
9” x 13” casserole dish
Directions:
Preheat the oven to 350
Saute the celery green pepper and onion over medium heat for 5 minutes or until onion is translucent
Combine the celery, green pepper, onion corn, green beans, sour cream, cream of celery soup and grated cheese together in a mixing bowl. Pour mixture into a 13x9 casserole dish.
In a separate mixing bowl combine the melted butter and crushed Cheez-Its. Cover casserole completely with Cheez-It crackers.
Bake uncovered until bubbly, about 30-40 minutes.
