Spinach Lasagna

Ingredients:
8 ounces lasagna noodles
Cottage cheese mixture:
2 Pounds of cottage cheese
2 Eggs
1 Tablespoon of chopped parsley
1/2 Cup soft butter
Salt, garlic and pepper to taste
1 Pound of mozzarella or jack cheese, shredded
2 (10 ounce) packs of frozen spinach, thawed, moisture pressed out
1 Cup parmesan cheese, grated
Special tools/utensils needed:
9” x 13” lasagna pan, greased
Directions:
Preheat the oven to 350 degrees F.
Grease lasagna pan.
Thaw or microwave spinach. Drain and press out moisture.
Cook noodles, drain well, and press out moisture.
Mix cottage cheese, eggs, parsley, butter, and spices.
Layer noodles, the cottage cheese mixture, mozzarella, spinach, and parmesan cheese. Repeat layers until ingredients are gone.
Bake uncovered for 30 minutes. Let sit for 5 minutes before serving.
